Question: How do I get to know where to use MAG verbs (prefix), MA VERBS or UM verbs?

The verb prefixes you have listed are actor focus verbs. As extensive as this site is, it appears this site does not give a specific lesson on verb prefix and formation. So here is a basic summary:
 
Mag-, ma-. and -um- verb affixes are actor focus. That is, the actor (denoted by the words "ako", "ka", "kayo", "kami", "tayo", or "ang + noun") is doing the action. The object (denoted by the words "ko", "mo", "ninyo", "namin", "natin" or "ng + noun") is receiving the action.
 
Example: Mag-luluto ako (I am cooking)
Example: Nag-laro ang bata ng patpat (The child played with a stick)
 
To apply the affixes to a root word, use the notes below:
 
* Mag + (root);
Example: Mag + trabaho (work) = Magtrabaho (to work)
 
* Ma- + (root);
Example: Ma + tulog (sleep) = Matulog (to sleep)
 
* -Um- is different; if the root begins with a consonant, -um- is placed after the first consonant and before the next vowel. If the root begins with a vowel, it is placed before the root.
Example: Um + alis (departure) = Umalis (to leave, to depart)
Example: Um + takbo (a run) = Tumakbo (to run), notice that -um- is inside the root.

@General1lol Thank you so much I understood what you explain but I do have a question. How do I know with which word to use which affix? For example: why is it MA + Tulog and not MAG + Tulog?

@Fyra21 Honestly I would get a grammar book or a Tutor to teach you exactly why. Ma- is another verb form in Tagalog.
Matulog
Makain
Magutom
Etc.

Mag and Um and Ma verbs all have some consistent patterns that are useful to know, and a full grammar book would help to explain fully.
 
Matulog, for example, makes sense because ma- verbs are often used for bodily senses and states of being, ex: marinig (hear), makinig (listen), matulog (sleep), mahiga (lie down), manood (watch), makita (see), maramdaman (feel), mamatay (die).
 
HOWEVER, keep in mind that a grammar book can teach you some common themes for Mag and Um and Ma verbs, but language is “not a math problem,” and ultimately it comes down to memorizing which verb words and conjugations are appropriate for what you are trying to say.
 
For example, tawagin and tawagan. Tawagin is to call out to someone, and tawagan is to call someone on the phone. Grammar books have no rule that would tell you which is which, you simply have to memorize which is appropriate.
